Individual Lasagna

This Individual Lasagna is made with creamy Ricotta, shredded Mozzarella, and a hearty meat marinara sauce. It has lots of flavor and it’s easier and faster to prepare by using no-boil oven ready lasagna noodles. 

This lasagna is assembled in two individual dishes for a fun lunch, dinner, or an impressive date night meal for two.

Can you boil oven ready lasagna noodles?

They are not meant to be boiled but you can boil them for about 4 minutes to make them more pliable if you want to make lasagna roll-ups.

How to make Lasagna for Two

Preheat the oven to 375 degrees F.

Carefully break each noodle in half and dice the onion.

Fry the onion and ground beef in a medium skillet for a few minutes until the beef is browned, breaking up any clumped meat. Drain and return to the pan.

Add in the garlic, oregano, basil, salt and pepper. Stir in the marinara sauce and simmer over low heat for 5 minutes.

At the same time, in a small bowl, whisk together the egg, ricotta, and parmesan.

In the bottom of two individual 18.6-ounce oven-safe dishes, place about ⅓ of the meat sauce across the bottoms, divided evenly.

Top the sauce with one half noodle in each dish.

Spread the ricotta mixture over the noodles in each dish, divided evenly.

Then top with another ⅓ of the meat sauce mixture, divided evenly.

Add another half noodle to each dish.

Pour on the remaining ⅓ of the sauce, divided evenly.

Layer the shredded mozzarella, or the mozzarella slices, over the sauce in each dish, divided evenly.

Loosely tent the dishes with foil and bake for 40 minutes.

Remove the foil and bake for another 10 minutes, allowing the cheese to brown.

Let cool for about 15 minutes before serving.

Serve on cork trivets or pot holders to protect surfaces. Be careful, they will still be very hot!

Ingredients

  • 2 no boil oven ready lasagna noodles
  • 1 small onion
  • 8 ounces lean ground beef
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and Black pepper to taste
  • 1 ½ cups marinara sauce
  • ½ cup ricotta cheese
  • 1 egg
  • ¼ cup freshly grated parmesan cheese
  • 4 ounces shredded mozzarella cheese (or fresh sliced mozzarella)
  • Fresh parsley (for garnish - optional)

If I need to use gluten free noodles (or regular noodles) can I use cooked ones in place of the no boil lasagna noodles?

Hi Jordan, if you want to cook the noodles first I would recommend reducing the amount of sauce by about 1/4 cup since the noodles won't need to absorb as much during baking. I hope that helps :)
