How to make Caramelized Bananas Dessert
For the peanut butter cookies
Prepare a jumbo muffin pan by spraying two of the muffin spaces with nonstick baking spray. Click for a jumbo muffin pan.
Preheat the oven to 350 degrees F.
Whisk the sugar, peanut butter, and egg together until smooth.
Scoop half of the peanut butter cookie batter into each of the prepared muffin tin spaces.
Bake for about 20 minutes.
Remove the cookie cups from the oven and place the muffin tin on a cooling rack leaving the cookies inside.
Allow the cookie cups to cool while you prepare the bananas.
For the caramelized bananas
Melt the butter in a frying pan over medium heat.
Slice the banana.
Add the sliced bananas, cook, and stir for about 2 minutes.
Add the brown sugar, vanilla, cinnamon, and salt.
Lower the heat and continue cooking, stirring constantly for about 2 more minutes.
To assemble the dessert
Place each cookie cup on a dessert plate or bowl.
Top each cookie cup with a scoop of vanilla bean ice cream.
Pour half of the banana mixture over top of each of the ice cream scoops.

- ½ cup light brown sugar

Can this be made in a regular muffin tin? Do not own a jumbo muffin pan. Also if I use a regular muffin tin how long would it cook for?

Hi Fina, if you use a regular muffin pan you will probably want to add the filling to 4 of muffin slots instead of just two. That would make them smaller of course so baking time would probably be closer to 15 minutes instead of 20. I hope that helps :)
