Preheat the frying pan containing the bacon grease over medium heat.

Stack the tortillas on a microwave-safe plate and cover with a damp paper towel. Microwave them until soft, about 30 seconds.

Breakfast Crunchwraps - add bacon, egg, and cheese

Place the tortillas on a dinner plate. Lay 4 half slices of bacon on each tortilla leaving a 1 1/2-inch border. Divide the eggs into three equal portions and place 1/3 on top of the bacon, spreading into an even layer. Place a slice of cheese over the eggs. Add any additional optional ingredients.

Breakfast Crunchwraps - add onion, tomato, and lettuce

Fold the top of the tortilla down over the filling to the center. Hold that piece down and continue folding the rest of the tortilla towards the middle until the filling is completely covered, about 5 or 6 folds. Carefully flip the crunchwrap over and repeat with the remaining tortillas.

Breakfast Crunchwraps - fold the tortilla edges in toward the center

Place the crunchwraps, folded-side down, in the heated pan, as many as will fit in a single layer. Cook until golden brown, 2 or 3 minutes on each side, checking often. Repeat as needed until all the crunchwraps are cooked.

  1. do all 3 crunch wraps come to 392.9 ? or is the 3 divided into 2 servings so that half the 3 is 392.9 calories?
just was not sure which way you meant here? sorry

    great recipes…thanks

    Heather

    1. Hi Heather, 392.9 is for each Crunchwrap and includes the optional ingredients listed. My husband ate two and I ate only one so I thought it would be best to post the calories based on each wrap. Thanks for the question 🙂

  2. Thank you for the information.! LOL I’m going to try this. My dh is diabetic and I can find tortillas with low carbs and then fold in a lot of protein ingredients at breakfast time so he has something healthy that he can hold in his hand and also last until lunchtime. He loves tortillas for roll ups so this could also add that “crunch” that we sometime crave.

  3. Okay….replying to see if by checking the subscribe to comment comes back to me…
Have a check mark in the wee box….
