Bacon Wrapped Cream Cheese Chicken

This Bacon Wrapped Cream Cheese Chicken recipe is so easy with only 4 ingredients and 35 minutes. The flavors of cream cheese, chives, tender chicken breast, and crispy bacon are excellent together and it’s low Carb.

How to make Bacon Wrapped Cream Cheese Chicken

Step 1 – Preheat the oven to 400 degrees F.

Step 2 – Soften the cream cheese for about 20 seconds in the microwave.

Step 3 – In a small bowl, mix the cream cheese and chives together.

Step 4 – Spray an 8 x 8 oven-safe baking dish with nonstick cooking spray.

Step 5 – Place the pieces of chicken in the baking dish.

Step 6 – Spread the cream cheese mixture over the middle of each piece of chicken, divided evenly.

Step 7 – To make a bacon weave, cut each piece of bacon in half. Weave 4 of the halves together by placing 2 vertical and 2 horizontal and then crisscrossing them together to overlap each other. Repeat with the other 4 bacon halves.

Step 8 – Wrap the bacon weaves over the cream cheese mixture on each chicken cutlet.

Step 9 – Bake uncovered in the preheated oven for 30 minutes until juices run clear and internal temperature reaches 165 degrees F.

Step 10 – If the bacon is not quite done enough, turn on the broiler and broil six inches from the heat for about 5 minutes or until the bacon is just turning crispy.

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 ounces cream cheese
  • 1 Tablespoon fresh or dried chives
  • 4 slices of bacon

Instructions
 

  • Preheat oven to 400 degrees F.
  • Soften cream cheese for about 20 seconds in the microwave.
  • In a small bowl, mix cream cheese and chives together.
  • Spray an 8 x 8 oven-safe baking dish with non-stick spray.
  • Place two chicken cutlets in the baking dish.
  • Spread the cream cheese mixture on top of the chicken breast, and divide evenly.
  • Cut each piece of bacon in half. Weave 4 of the halves together by placing 2 vertical and 2 horizontal and then crisscrossing them together to overlap each other. Repeat with the other 4 bacon halves.
  • Place one bacon weave over cream cheese mixture on each chicken cutlet.
  • Bake uncovered for 30 minutes until juices run clear and the internal temperature of a meat thermometer reaches 165 degrees F.
  • If bacon is not quite done enough, turn on the broiler and broil six inches from heat for about 5 minutes or until bacon is just turning crispy.
