Substitutions

Try using other kinds of cheese like cheddar cheese, Colby Jack cheese, or mozzarella cheese instead of Monterey Jack cheese.

Swap the jarred roasted red peppers for diced fresh tomatoes.

How to make Monterey Jack Chicken Casserole

Step 1 – Preheat the oven to 425˚F. 

Step 2 – Cover the chicken with plastic wrap, pound the chicken flat with a meat mallet, and place it in the bottom of a 2-quart casserole dish.

Step 3 – Spread 2 tablespoons of BBQ sauce on each chicken piece.

Step 4 – Layer the roasted red peppers over the BBQ sauce.

Step 5 – Layer the bacon over the top of the casserole.

Step 6 – Bake uncovered in the preheated oven for 25 minutes.

Step 7 – Remove from oven and sprinkle cheese over the top, then turn oven to 350˚F and cook for 5 additional minutes, or until chicken is cooked through (165˚F internal temperature).

Step 8 – For garnish, sprinkle green onions over the top, if desired. Serve warm using a slotted spoon. There will be extra liquid left in the pan. Enjoy!

Ingredients

  • 2 pounds boneless skinless chicken thighs (or chicken breast)
  • ½ cup BBQ sauce
  • 4 slices of bacon
  • ½ cup jarred roasted red pepper
  • 1 cup shredded Monterey Jack cheese
  • Optional – 1 green onion (diced)

Instructions
 

  • Preheat the oven to 425˚F.
