Ingredients

shrimp sized 20-30 per pound (I buy peeled, deveined, and tails removed)
thin sliced bacon
fresh mozzarella pearls
apricot preserves
Substitutions
For spicy heat try using jalapeno jelly instead of apricot preserves.

How to make 4 Ingredient Glazed Bacon Mozzarella Shrimp
Step 1 – Preheat the oven to 425°F and line a small sheet pan with parchment paper.
Step 2 – Prepare the shrimp, drain, and pat dry with paper towels. If you didn’t buy shrimp that is peeled, deveined, and tails removed, you will need to do those steps and it will add more time to the preparation. (see notes)
Step 3 – Place the raw shrimp on their sides curled in a circle and add a mozzarella pearl on top of each one.
Step 4 – Wrap the raw bacon halves around the shrimp and cheese and place them on the prepared baking sheet in a single layer.
Step 5 – In a small bowl, heat the apricot preserves in the microwave for about 30 seconds.
Step 6 – Using a pastry brush, spread the apricot sauce over the top of each bacon shrimp.
Step 7 – Put the tray in the preheated oven for about 15 minutes.
Step 9 – Turn the shrimp over, brush the second side with apricot sauce, and bake another 5-10 minutes, or until bacon is done.
Step 10 – Allow to cool slightly. Place a toothpick in each one and serve.
Pro Tips
If you need to prepare the shrimp – Peel the shrimp. Then, use a sharp pairing knife to slice open the shrimp along the back (side opposite of where the legs were). If visible, remove the vein and discard. Cut the tails off. Repeat with remaining shrimp.
Store leftovers in an airtight container in the fridge for 4-5 days.

- 14 fresh mozzarella pearls
- ½ cup apricot preserves
