How to make Loaded Potato Soup
Chop the potatoes into bite sized pieces and dice the white or yellow onion.
Add the potatoes, onion, chicken broth, garlic, salt, and pepper to a 4-quart crockpot. Click for a 4 quart crockpot slow cooker.
Cook on low for 8 hours or on high for 4 hours.
Near the end of the cooking time, fry the bacon in a medium frying pan until crisp. Drain on a paper towel and crumble into small pieces.
Dice the green onion.
Turn off the heat of the crockpot slow cooker and remove the lid.
Add the cream cheese, cheddar cheese, and heavy cream. Stir until cheese is melted and mixed in.
Divide the soup between two bowls and top with the bacon crumbles, green onion, extra shredded cheese, and sour cream.
