A fajita in Tex-Mex cuisine is any grilled meat that is served like a taco on a flour or corn tortilla. The term originally referred to skirt steak, the cut of beef first used in the dish.

Fajitas can also be made with chicken, pork, shrimp, lamb, salmon, other types of fish, and other cuts of beef, as well as vegetables instead of meat.

How to make Beef Fajitas on the stove:
Cut the onion and bell peppers into strips.

Dice the green onion.
Heat the oil in a cast iron skillet over medium heat. Click for a cast iron skillet.
Season the Ribeye steak with a little of the fajita seasoning on both sides.

Cook the steaks in the skillet about 3 – 5 minutes on each side, or until it is done to your liking. Transfer the steak to a cutting board and set aside to rest.

Place the bell peppers and onions in the skillet. Stir-fry for about 5 minutes, or until tender-crisp.

Add the water to the skillet. Sprinkle in the fajita seasoning and salt. Stir and combine all together until sauce thickens.
Turn off the heat. Drizzle lime over the cooked fajita mixture. Stir to incorporate.
Sprinkle with cilantro.
Slice the Ribeye steak into strips and add back into the pan.

Garnish with lime and green onions if desired.
Serve with the fajita tortillas.

Ingredients
- 1/2 medium onion
- 1 small red bell pepper
- 1 small yellow bell pepper
- 1 Tablespoon oil
- 8 oz Ribeye steak
- 1/8 cup water
- 1 oz package Fajita seasoning, or homemade fajita seasoning
- Pinch of salt
- 1/2 Tablespoon lime juice
- 1/2 Tablespoon dried cilantro
- 4 - 5 Fajita Tortillas
- Lime (for garnish - optional)
- 1 green onion (for garnish - optional)
Instructions
