Green Chile Chicken Rice

This Green Chile Chicken Rice is bold, super easy, and flavorful. Tender juicy chicken, rice, and creamy green chile sauce are smothered in a layer of melted cheese.

This Mexican inspired recipe for two makes a great lunch, dinner, or romantic date night meal.

We served these southwest casseroles with a side of tortilla chips which was a delicious combination.

Could I use vegan cheese and vegan sour cream ( plant based) to accommodate my dairy allergy?

Zona

Hi Marlene, I'm sorry I am not familiar with vegan cheese, sour cream, or other vegan products so I'm not sure if they would work as substitutions in this recipe. If you decide to try it please let me know how it works out for you. Thanks

I precooked the rice and chicken because of personal reasons. Adjusted the ingredients and cooking time and it was Amazing. Thanx for the recipe!!

I made this and it was really runny. The rice was cooked but everything was swimming in juice. What could I change to fix that? We liked the flavor, just not the runny part.

Hi Kathy, I'm glad you enjoyed the flavor of this dish. If you like it less saucy you could add a 1/4 cup less of chicken stock/broth. Let me know how it works out for you. Thanks for your question :)
