Enchilada Pizza Recipe for Two

Enchilada Pizza has ground beef and onions simmered in taco seasoning, tomato sauce and enchilada sauce, then spread over homemade crust and topped with diced tomatoes and gooey melted Colby Jack cheese.

This easy, delicious taco flavored pizza is quick, ready in just 35 minutes including the homemade crust. Slice it into 6 pieces and serve as a great lunch, dinner, or impressive date night meal for two.

 

This enchilada pizza could also be called taco pizza, Mexican pizza, or wet burrito pizza. I just call it super delicious and filling!

 

How to make Enchilada Pizza:

If you’re using a pizza stone, be sure to put it in the oven before you turn on the heat. Click here for a 14 inch pizza stone with serving rack.

 

Preheat the oven to 425 degrees F (220 C).

 

In a large bowl, dissolve the yeast and sugar in warm water (110 degrees F or 43.33 degrees C). The temperature is right when it just barely feels warm to your fingers. Water that is too hot will kill the yeast.

Let the yeast mixture stand for 10 minutes until it becomes frothy.

 

While the yeast activates, dice the onion and tomato.

 

Brown the ground beef and onions in a frying pan, about 5 minutes.

Stir in the taco seasoning, tomato sauce, and enchilada sauce, and simmer about 5 minutes.

To the activated yeast mixture, add the flour, oil and salt and stir with a wooden spoon, or mix in a stand mixer, until a soft dough forms.

If the dough is too wet mix in additional flour one tablespoon at a time until it is no longer sticky. If it’s too dry, mix in additional water one tablespoon at a time.

 

On a clean floured surface, using a rolling pin, roll the dough into a circle, about 13 inches wide. Click here for a non-stick rolling pin.

Place the dough on the hot pizza stone.

Roll a small edge around the outside of the dough. Use a spoon (to keep from getting burned) on the outside of the dough and a finger on the inside of the dough to form the edge.

 

Pour the meat sauce mixture onto the crust.

Top with the shredded cheese, and tomatoes.

Bake 12 – 15 minutes. Drizzle with sour cream if desired. Add any additional toppings that you love.

Ingredients

For the Dough:

  • 1 1/4 teaspoon jarred active dry yeast
  • 1 Tablespoon granulated sugar
  • 1/2 cup warm water
  • 1 1/2 cups all-purpose flour
  • 1 Tablespoon cooking oil
  • 1/2 teaspoon salt

For the Sauce:

  • 10 oz can enchilada sauce
  • 8 oz can tomato sauce

For the Topping:

  • 1/2 lb ground beef
  • 1 small onion
  • 1 package Taco seasoning
  • 2 cups Colby Jack Cheese
  • 1 small tomato
  • Sour cream (optional)
