Substitutions

Boneless chicken thighs can be used instead of breasts.

Shredded rotisserie chicken can be used by adding it during the last 30 minutes of cooking.

How to make Crockpot Chicken and Wild Rice Soup

Step 1 – Dice the onion, carrots, and celery. 

Step 2 – Add all of the ingredients into a 4-quart crock pot. Cook on low for 6 hours.

Step 3 – Shred the chicken then stir the cooked chicken back into the soup and serve.

Ingredients

  • ½ lb boneless skinless chicken breasts
  • ¼ cup onion
  • ¼ cup carrots
  • ¼ cup celery stalks
  • 1 teaspoon jarred minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon dried thyme
  • 1 bay leaf (Optional)
  • 2 cups low-sodium chicken broth
  • ¼ cup wild rice-brown rice blend ( uncooked)

Instructions
