Chicken Gnocchi Soup

Substitutions

You can use store-bought gnocchi or homemade gnocchi.

We love rotisserie chicken in this recipe but you can use cooked leftover shredded chicken.

You can use fresh shredded carrots. They will need to be added in step 1 and they may not be very soft when the soup is done.

How to make Chicken Gnocchi Soup

Step 1 – Melt the butter in a large saucepan over medium heat.

Step 2 – Once the butter is melted add the garlic, salt, pepper, onion powder, and Italian seasoning.

Step 3 – Pour in the chicken broth and heavy cream, and stir.

Step 4 – Toss in the spinach and cooked shredded chicken, and stir. Turn up the heat and bring the soup to a boil.

Step 5 – Gently add gnocchi and canned carrots to the soup and boil for 4-5 minutes.

Pro Tips

Store leftover soup in an airtight container in the fridge for 4-5 days.

Ingredients

  • 3 Tablespoons butter
  • 1 teaspoon jarred minced garlic
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon onion powder
  • ½ tablespoon Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups shredded rotisserie chicken (or cooked shredded leftover chicken)
  • 2.5 ounces baby spinach leaves
  • 8 ounces gnocchi
  • 1 cup canned carrots (drained)

Instructions
 

  • In a large saucepan, over medium heat, melt the butter.
  • Once the butter is melted add the garlic, salt, pepper, onion powder, and Italian seasoning.
  • Pour in the chicken broth and heavy cream, and stir.
  • Toss in the spinach and cooked shredded chicken, and stir. Turn up the heat and bring the soup to a boil.
  • Gently add the gnocchi and canned carrots to the soup and boil for 4-5 minutes.
