Instructions
In a large saucepan, over medium heat, melt the butter.
Once the butter is melted add the garlic, salt, pepper, onion powder, and Italian seasoning.
Pour in the chicken broth and heavy cream, and stir.
Toss in the spinach and cooked shredded chicken, and stir. Turn up the heat and bring the soup to a boil.
Gently add the gnocchi and canned carrots to the soup and boil for 4-5 minutes.
Notes
You can use store-bought gnocchi or homemade gnocchi.
We love rotisserie chicken in this recipe but you can use cooked leftover shredded chicken.
You can use fresh shredded carrots. They will need to be added in step 1 and they may not be very soft when the soup is done.
Store leftover soup in an airtight container in the fridge for 4-5 days.
