These Mini Banana Cakes with Cream Cheese Frosting are amazing! The cake is moist and packed with huge banana flavor topped with the perfect cream cheese frosting. Sprinkle on some chocolate chips or chopped walnuts if desired.

How to make Mini Banana Cakes
Preheat the oven to 350 degrees F (180 C).
For the Banana Cake
Spray two 7-ounce ramekins with non-stick cooking spray and set aside. Click here for 7-ounce ramekins.
In the bowl of a stand mixer, cream together the butter and sugar. Click here for a Kitchenaid Stand Mixer.
Add the mashed banana and vanilla. Mix until combined well.
Mix in the egg.
Add the flour, baking soda, and salt. Mix until just combined. Do not over-mix.
Pour the batter into the prepared dishes, and divide evenly between the two.
Bake for 20-25 minutes. The cakes will be done when a toothpick inserted into the center comes out clean.
Place the ramekins onto a cooling rack and allow the cakes to cool completely.
For the Cream Cheese Frosting
In the bowl of a stand mixer, mix the cream cheese until smooth.
Mix in the powdered sugar and vanilla extract.
Spread the cream cheese frosting over the cooled cakes.
Sprinkle the tops with chocolate chips, chopped pecans, or walnuts if desired.

A question...some of your recipes (like this one) indicate 1/8 cup of an ingredient. How do you measure this? None of my present measuring devices (nor those available on Amazon) have this quantity as an option.

I made this and it was such a hit. I did make it in a 6 inch cake pan for a friends Birthday Cake. I am loving making Mini Cakes. Was wondering if you have a Coconut Cake or Coconut Poke Cake recipe?
