Step 1 – Preheat the oven to 350°F.

Step 2 – Line two baking sheets with parchment paper and set aside.

Step 3 – Cream the butter and the 3/4 cup sugar in a bowl of a mixer until light and fluffy, about 1-2 minutes.

Step 4 – Add the vanilla extract and egg, and mix to combine.

Step 5 – In another bowl mix the flour, cream of tartar, baking soda, and salt.

Step 6 – Slowly add the flour mixture to the butter mixture until combined.

Step 7 – Reduce the speed to low and add toffee bits until just combined.

Step 8 – In a small bowl combine the cinnamon and 1 tablespoon sugar.

Step 9 – Portion cookies, about 1 tablespoon each, and roll into balls.

Step 10 – Coat each cookie dough ball in the cinnamon sugar mixture.

Step 11 – Place on the prepared sheets about 2 inches apart. Bake each batch for 10 to 12 minutes.

Step 12 – Let cool on the pan for 2 minutes, then transfer to a wire rack to cool completely.

  • ¾ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 1 egg
  • 1 ¼ cups all-purpose flour
