This fresh Tomato Peach Salsa is light and refreshing with flavors of red ripened tomato, yellow onion, and sweet fresh peaches accented with cilantro, green chilies, cider vinegar, and lime juice. Ready in just 15 minutes!
Peel peaches and cut to remove the pit. Then cut into large wedges on a cutting board.
Cut tomato and onion into large wedges.
Combine the peaches, tomatoes, onion, cilantro, and garlic in a food processor. Pulse until coarsely chopped.
Add in green chilies, cider vinegar, lime juice, brown sugar, pepper and salt. Pulse food processor until combined and tomatoes and onions are preferred size.
Transfer the salsa to a mason jar and chill until ready to serve.
Notes
Store fresh salsa in an airtight container for about 5 to 7 days in the fridge.
