Thai Chicken Peanut Noodles is a very tasty Asian-inspired recipe made with chicken and broccoli slaw in a mildly spicy Thai peanut sauce. It's easy and quick, ready in just 15 minutes.

creamy peanut butter

(mild or to taste)
Instructions
Bring a medium saucepan of water to boiling. Add salt and pasta noodles. Cook according to the package directions.
While the pasta cooks, chop the green onions and set aside.
Dice the chicken into cubes and season with salt and pepper.
Heat 1/2 tablespoon of oil in a medium skillet.
Cook the chicken for about 5 minutes, stirring occasionally.
Remove the chicken to a bowl, cover to keep warm and set aside.
Add the remaining 1/2 tablespoon oil to the same skillet over medium heat.
Add 2/3’s of the green onions, the minced garlic, broccoli slaw mix, and ginger. Cook until the veggies soften, about 2 minutes.
Reserve ¼ cup of the pasta water and set aside.
Drain the noodles in a colander.
In the skillet, stir in the honey, peanut butter, soy sauce, rice vinegar, sweet chili sauce, and reserved pasta water. Stir until combined.
Return the chicken to the skillet with the Thai Peanut Sauce.
Add the noodles and toss to coat. Cook until heated through about 1 minute.
Transfer to serving bowls and sprinkle with remaining green onions.
