This Pepper Jack Chicken Casserole is easy, delicious, low carb, and ready in just 35 minutes. Diced chicken, mushrooms, and green beans are coated in a creamy Pepper Jack cheese sauce.
Spray an 8x8-inch casserole dish with non-stick spray.
On a cutting board, dice the chicken into bite sized cubes.
In a medium bowl, mix the chicken, mushrooms, onion powder, garlic powder, cumin, salt, pepper, drained green beans, beaten egg, chopped Pepper Jack cheese, and sour cream until combined.
Place the chicken mixture in the bottom of the prepared baking dish.
Bake 30 minutes or until chicken is cooked through.
