boneless chicken breasts

Coarse salt and fresh cracked black pepper

medium tomatoes

sliced mozzarella

Instructions
Lightly toast the small bread slices.
Cut the tomatoes into 8 slices.
Split the chicken breasts horizontally using a filet knife, creating 4 flat pieces of chicken.
Season the chicken with the salt and pepper to taste.
In a large skillet, heat the oil over medium-high heat. Fry the chicken in the skillet until cooked through about 3 to 5 minutes per side.
Preheat the broiler to the high setting.
Place the 4 toast slices onto a broiler pan and top each slice of bread with a piece of the chicken.
Add two tomato slices to each sandwich. Place two slices of mozzarella on each sandwich.
Broil the sandwiches until the cheese is melted about 3 to 5 minutes.
Sprinkle with the fresh basil.
