Preheat oven to 375˚F and line a small baking sheet with parchment paper.
In a small bowl, whisk together the maple syrup, soy sauce, Dijon, and garlic.
Place the salmon on a baking sheet and top with about 1/3 of the maple glaze, reserving the rest for later.
Bake salmon for 15 – 20 minutes, adding more glaze after the first 10 minutes. When salmon is cooked, remove from oven and top with remaining glaze before serving.

Cook the salmon until the thickest part reaches 145°F for perfectly cooked fish. But if you’re going for that amazing melt-in-your-mouth medium-rare vibe, pull it at 125°F—just keep in mind it’ll keep cooking a bit while it rests!
