Instructions
On a cutting board, cut the pork into bite-sized cubes.
Dice the green pepper small.
Cut the pita pockets in half.
Heat the olive oil in a high-sided frying pan over medium heat.
Add the green pepper and pork in a single layer and cook until the meat is cooked through, stirring occasionally.
Stir in the onion, parsley, cornstarch, salt, minced garlic, sugar, Italian seasoning, water, and tomato paste.
Bring to a boil, reduce the heat, and simmer for 1 - 3 minutes until thickened.
Fill the delicious pockets of pita bread with lettuce, if desired, meat mixture, and mozzarella cheese. Serve and enjoy.
Notes
You can use pork, chicken, beef, or ground beef to mix it up a bit.
You can use romaine lettuce, fresh spinach leaves, or iceberg lettuce.
Add some red pepper flakes for some spicy heat.
Prefer a slice of cheese? Try sliced provolone instead of mozzarella.
