These Individual Broccoli Cheese Quiches are smooth, cheesy, and creamy on the inside with a perfectly flaky crust. They are filled with onions, broccoli, cheese, eggs, and milk. This version is vegetarian but you could easily add in meats and other veggies if you wish.
Place oven rack in middle position and preheat to 375 degrees F.
Take pie crust out of the fridge or freezer and let stand for 15 minutes.
Cut the pie crust in half and place halves into two 18.6 ounce oven-safe baking dishes. It doesn’t have to be pretty! Poke each crust several times with a fork. Bake for 10 minutes or until light golden brown.
While pie crust bakes, heat the oil in a skillet over medium heat. Add the onion and broccoli and cook, stirring occasionally, until onions are translucent about 5 minutes.
Add onions, broccoli florets, and cheese to the bottom of the pre-baked pie crusts.
In a medium bowl whisk together eggs, milk, salt, and pepper until combined. Pour the egg mixture over the broccoli mixture, divided evenly.
Place the two oven-safe dishes into the oven and bake for 30 minutes until the quiche is set and the knife inserted in the center comes out clean.
Notes
Store leftovers in an airtight container in the fridge for 4-5 days.
You can use homemade pie crust in this recipe.
Try switching up the ingredients a bit by using a mixture of mild cheddar cheeses, mozzarella cheese, parmesan cheese, or different cheeses.
Try diced red onion, diced bell pepper, or fresh chopped broccoli.
