Instructions
Preheat the oven to 350 degrees F.
Sprinkle the filet mignon beef tenderloin steaks with the salt and fresh ground pepper and set aside.
In a medium bowl, whisk together the Parmesan cheese, butter, mayonnaise, dried chopped chives, Old Bay Seasoning, and dried basil.
Gently fold the shrimp into the mayo mixture.
Preheat a medium cast iron skillet over medium heat.
Add the cooking oil and the seasoned beef tenderloin filets. Cook for 2 minutes on each side.
Remove the skillet from the heat and top each filet with the shrimp Parmesan mixture, divided evenly.
Place the skillet in the oven for 12 - 15 minutes or until the topping turns golden brown.
Remove from the oven and transfer to serving plates.
Top each with fresh chopped parsley and fresh ground black pepper, if desired.
