Instructions
Optional - sear the roast in a skillet over high heat, about 1 minute per side, then remove.
Place the beef in a 4-quart slow cooker crockpot.
Cut the onion into slices, then layer them on top of the roast.
In a bowl, whisk the beef broth, water, Au jus mix, and onion soup mix. Pour over the onions in the pot.
Cover the crockpot and cook on low for 8 hours.
Remove the meat from the crockpot and place it in a bowl with a little of the Au Jus. Use a fork to shred it.
Preheat the broiler on high heat.
Place the hoagie rolls on a baking sheet lined with parchment paper.
Open the hoagie rolls and fill with shredded beef and onions from the crockpot.
Top with provolone cheese slices using 2 slices per sandwich.
Broil open-faced for about 3 minutes, until the cheese is nicely melted. Watch closely so the bread doesn't burn.
Ladle Au Jus liquid from the crockpot into individual dipping bowls.
Serve the sandwiches with the Au Jus for dipping.
