Preheat the oven to 425 degrees F. and spray an 8x8-inch baking dish with non-stick cooking spray.
Place the veggies and shredded chicken in the bottom of the dish.
Whisk together the soup and milk and pour over the veggies and meat.
Add any desired seasonings.
Add the tater tots in a single layer over the soup mixture.
Sprinkle the cheese over the tater tots. Optionally, you can add the cheese during the last 5 minutes of cooking if you prefer creamy melted cheese.
Place in the bottom third of the oven and bake for 25-30 minutes or until tater tots and cheese are lightly golden brown. Add any optional toppings and serve.
Notes
You can substitute Greek yogurt or sour cream for the milk.
Cream of chicken soup or cream of celery soup can be used instead of cream of mushroom.
Other pre-cooked meat can be used. Try ground turkey, lean ground beef, ground chicken, or cubed beef.
Other types of shredded cheese can be used. Try cheddar cheese, Monterey Jack, or Mozzarella.
Add extra seasonings as desired, like onion powder, garlic powder, salt, and black pepper.
Other optional toppings include bacon bits, chives, or diced green onions.
This hearty casserole can easily be doubled and made in a 9x13-inch casserole dish. Bake an extra 10-15 minutes and add the cheese during the last 5 minutes of baking.
Store leftovers in an airtight container in the fridge for 4-5 days.
