Instructions
Pre-heat oven to 350 degrees F.
Spray two 18.6 oz oven safe baking dishes with non-stick spray.
Chop broccoli into bite-sized pieces and set aside.
Cut chicken into bite-sized pieces and set aside.
Cut bacon into ½ inch pieces and cook and stir in a frying pan until done but not too crispy.
Drain bacon on paper towel and set aside. Leave grease in pan.
Cook diced chicken in pan with bacon grease just until browned on all sides, about 2 – 3 minutes.
In a medium sauce pan, over low heat, melt butter.
Whisk in flour and salt until smooth.
Slowly add milk and continue whisking constantly until thickened and starts to simmer. Let simmer 1-2 minutes, and then remove from heat.
Fold in chicken, half of bacon, broccoli, and Swiss cheese. Combine gently until cheese starts to melt slightly.
Add beaten egg and stir gently to combine.
Pour into prepared baking dishes, divided evenly, and top with remaining crumbled bacon.
Bake for 35 minutes.
Remove from oven and serve on cork trivets to protect tables or surfaces.
