For the Graham Crusts:

(or crushed graham crackers)

Instructions
Preheat the oven to 375 degrees F.
For the Graham Crusts:
Spray two mini pie tins with non-stick spray.
In a medium bowl, melt the butter.
Add the graham cracker crumbs, sugar, and salt to the melted butter. Stir well to combine.
Spread the crumb crust mixture into the bottoms of the mini pie pans, evenly and up the sides. Press it firmly to compact it together. Set aside.
For the Key Lime Filling:
In a medium bowl whisk the egg yolks together.
Add the sweetened condensed milk and lime juice to the egg yolks and whisk together until well combined.
Divide mixture into the two unbaked graham cracker crusts.
Place the individual pies on a baking sheet and bake for 20 minutes.
Cool completely on a wire rack, for about 30 minutes.
Chill in the refrigerator, if desired, or serve when completely cooled.
Garnish with whipped cream and lime slices, if desired.

You can also use regular lime juice in these mini Key Lime pies if you can't find Key limes or Key lime juice.
