This homemade Taco Tater Tot Casserole for two features homemade taco seasoning with ground beef, black beans, tater tots, and enchilada sauce topped with gooey melted Colby Jack cheese.
Preheat the oven to 375 degrees F (190 degrees C).
Dice the onion.
Coat two 20 ounce baking dishes with non-stick cooking spray.
Cook the onion and ground beef in a skillet over medium heat until completely browned, about 5 minutes.
In a small bowl, mix together the chili powder, paprika, cumin, oregano, salt, black pepper, and cornstarch.
To the skillet with the ground beef, add in the garlic, homemade seasoning mix, and black beans. Cook and stir another 5 minutes. Set aside to cool slightly.
Combine the ground beef mixture in a large bowl with the tater tots.
Stir in about 1/2 of the Colby Jack cheese and mix slightly to combine.
Pour about 1/3 of the enchilada sauce into the bottom of the two prepared baking dishes, divided evenly.
Add the tater tot and ground beef mixture to the two baking dishes, divided evenly.
Lightly pat the mixture down into a solid, even layer in each dish.
Pour the remaining enchilada sauce over the tater tot layer, divided evenly.
Bake in the preheated oven for 25 minutes.
Sprinkle the remaining Colby Jack cheese over the casseroles, divided evenly, and return to oven until the cheese is melted and bubbly, about 5 minutes more.
