dried basil

shredded Parmesan cheese

Salt and pepper to taste

shrimp
(I buy peeled, deveined, and tails removed)

Old Bay Seasoning
▢
Fresh parsley for garnish

Instructions
Preheat the oven to 400 degrees F.
Wash and dry the potatoes. Pierce the skin several times with a knife or fork.
In a bowl, rub the potatoes with some cooking oil until completely coated.
Sprinkle all over generously with the coarse salt.
Place the potatoes on a baking sheet lined with foil.
Bake for 1 hour, or until slightly soft and golden brown.
When the potatoes have about 20 minutes left to cook, melt the butter and cream cheese in a saucepan.
Stir in the heavy cream and simmer on medium low, about 7 - 10 minutes, stirring often.
Add in the Parmesan cheese, basil, salt and pepper. Lower heat and keep warm.
Heat a frying pan over medium heat with a little oil or butter.
Pat the shrimp very dry then sprinkle with Old Bay seasoning.
Cook the shrimp until pink and opaque, flipping over half way through, about 2 minutes per side.
Place the baked potatoes on plates and cut the tops down the center. Gently split them open.
Top with the cream basil sauce, fried shrimp, and parsley if desired.
