This Hawaiian Fried rice is a refreshing take on the traditional fried rice we are used to. It has chunks of ham, pineapple, onion, and red bell pepper with a sweet and tangy sauce. Ready in just 20 minutes!
2Tablespoonspineapple juice(reserved from the canned pineapple)
For the Rice:
1Tablespooncooking oil
½onion
½bell pepper
8oz.diced ham chunks
8oz.can pineapple chunks in juice(drain and reserve juice for sauce)
1cupwhite rice
1egg
Fresh chopped chives for garnish
Instructions
Cook the rice according to the package directions.
In a bowl add soy sauce, garlic salt (or minced garlic), cider vinegar, brown sugar, and pineapple juice. Whisk together until combined and set aside.
Dice the onion and bell pepper.
Heat the oil in a wok or large frying pan.
Add the diced onion and bell pepper and cook on medium heat, stirring often for about 5 minutes.
Add in diced ham and pineapple chunks and cook for 3 more minutes.
Add in cooked rice and stir everything together until combined.
Pour in the soy sauce mixture, mix well and stir occasionally while cooking for another 5 minutes.
Move all the rice mixture over to one side of the pan and crack the egg onto the empty side. Stir the egg with a spatula to scramble it without mixing in the other ingredients.
After the egg is scrambled and cooked through, mix it together with the rice mixture. Serve garnished with chopped fresh chives if desired.
