To assemble:

Instructions
For the shrimp:
In a large bowl, whisk together the milk and eggs.
In a separate bowl, whisk together the flour, cornmeal, Old Bay seasoning, dried thyme, salt and pepper.
Coat the shrimp in the milk mixture then toss in flour mixture until well breaded.
Preheat 2 inches of oil in a medium high-sided skillet over medium heat.
Fry the shrimp until golden brown, about 2 minutes per side. Drain on a paper towel-lined plate.
For the sauce:
Slice the green onion.
Whisk together the mayonnaise, mustard, lemon juice, parsley, and green onions.
To assemble:
Slice the tomato thin and chop or shred the lettuce.
Spread the sauce on the bottom halves of the buns.
Top with the fried shrimp.
Add the lettuce and tomatoes.
Cover with the bun tops.
