This Fried Shrimp Burger has Pepper Jack cheese topped with a crispy crunchy shrimp patty pan fried until golden brown, topped with lettuce, and pesto mayo served on a soft bun. The finely chopped onion is optional. They stay fresh and crunchy and my husband loved the flavor and texture but I prefer to leave it out. This easy shrimp sandwich is ready in just 15 minutes.
½poundraw shrimp(I buy peeled, deveined, and tails removed)
¼of a sweet onion(optional)
2Tablespoonsall purpose flour
1Tablespoonwater
Salt and pepper, to taste
Cooking oil for frying
For the trays:
¼cupall-purpose flour
1large egg beaten
½cuppanko bread crumbs
For the dressing:
¼cupmayonnaise
1Tbsppesto(from a jar)
To assemble:
2soft sandwich buns
2slicesPepper Jack cheese
2Lettuce leaves
Instructions
Pour 1/2 inch of oil into a high sided skillet and pre-heat over medium heat.
Chop the shrimp and onion very finely.
In a bowl, add the shrimp, onions, salt and pepper, and stir together.
Add the 2 tablespoons flour and the water and stir until combined.
Coat your hands in non-stick cooking spray and form the shrimp mixture into two equal burgers.
Prepare three trays side by side. Place the ¼ cup of flour into the first, the beaten egg into the second, and the panko bread crumbs into the third.
Dredge each burger with flour on both sides, then egg on both sides, and finally panko bread crumbs on both sides. They may try to fall apart during this process but just keep pressing them back together.
When the oil is fully heated, gently add the two patties and cook for about 2 minutes.
Gently flip them over and cook another 2 minutes until golden brown.
Transfer to a paper towel lined plate to drain.
In a small bowl, whisk together the mayonnaise and the pesto.
Place 1 slice of Pepper Jack cheese onto each bun bottom. Add the shrimp patties on top of the cheese, then top with lettuce, and finally top with the pesto mayo mixture. Add the bun tops and serve.
