Creamy Garlic Tuscan Chicken Recipe
Creamy Garlic Tuscan Chicken is coated in a light and creamy Parmesan cheese sauce filled with garlic, baby bella mushrooms, onion, roasted red peppers, pasta and spinach! This has really great flavor, is ready in just 30 minutes, and it's all done in one pot.
Ingredients
- 1 small yellow onion
- 8 ounces chicken breasts
- 2 Tablespoon butter (melted)
- 1 cup chicken broth
- 1 ½ teaspoons jarred minced garlic
- 4 ounces sliced baby bella mushrooms (or button mushrooms)
- ½ cup pasta (uncooked)
- 1 teaspoon dried Italian seasoning
- ½ cup roasted red peppers (from a jar)
- Salt and pepper, to taste
- 1 cup baby spinach leaves (1/2 of a 5 ounce bag)
- ¼ cup heavy cream
- ¼ cup fresh grated Parmesan cheese (plus some for garnish if desired)
Instructions
- On a cutting board, dice the onion and cut the chicken into bite-sized cubes.
- Add the butter to a large saucepan over medium heat.
- When the butter is melted, add the onions and chicken. Cook and stir about 5 minutes.
- Add the chicken broth, garlic, mushrooms, pasta, Italian seasoning, roasted red peppers, salt, and pepper to the pot.
- Bring to a boil and cook for about 15 minutes.
- Turn off the heat and stir in the baby spinach leaves just until slightly wilted.
- Then stir in the heavy cream and Parmesan cheese and serve.
