Instructions
Preheat the oven to 350 degrees F.
Bring a 3-quart saucepan to a boil. Add the shells and a pinch of salt to the boiling water and cook until al dente about 14 - 15 minutes.
Pour 1/4 cup of the spaghetti sauce into the bottom of an 18.6-ounce oven-safe baking dish.
To make the cream cheese mixture, in a medium bowl, stir together the softened cream cheese, sour cream, and chives or green onions. Set aside.
When the noodles are done, drain in a colander and rinse with cold water until cool enough to handle.
Scoop the cream cheese sauce into each of the shells.
Place the stuffed pasta shells on top of the pasta sauce in the casserole dish.
Pour the rest of the spaghetti sauce over the shells.
Sprinkle with the mozzarella cheese over the entire dish.
Bake in the oven until the mozzarella cheese is melted, about 25 minutes.
Garnish with parsley or basil if desired. Serve and enjoy!
