Start your day off right with this delicious Egg Bake with Tater Tots! Imagine crispy tater tots layered with gooey cheese, savory sausage, and fluffy egg. it's the perfect combo for breakfast lovers.
1cupfrozen tater tots or tater coins(about 4-5 ounces)
4ouncesground pork sausage(or cooked crumbled bacon, or diced ham)
¼cupsshredded cheddar cheese
⅛cupshredded Mozzarella(or Monterrey Jack Cheese)
1Jumbo egg
⅛cupmilk
⅛cupsour cream
⅛teaspoonsalt
⅛teaspoonblack pepper
⅛teaspoongarlic powder
⅛teaspoononion powder
Instructions
Preheat oven to 375 degrees. Spray an 18.6-ounce baking dish with non-stick cooking spray.
Cook the sausage in a skillet over medium heat. Break it up as you stir it to form crumbles. Drain the grease using a colander.
In the prepared baking dish, layer the tater tots, crumbled sausage, half of the cheddar, and all of the mozzarella.
In a medium bowl, whisk the egg, milk, sour cream, and seasonings.
Pour the egg mixture over the tater tot mixture in the prepared pan.
Bake in the preheated oven for 35 minutes, until golden brown.
Top with the remaining cheddar cheese and return to the oven for 5 more minutes until melted.

Notes about ingredients and substitutions
Oven temperatures vary. This casserole will be golden brown, puffy, and set in the middle when it's finished.
You can also use 4 ounces of cooked crumbled bacon or 4 ounces of diced ham.
Or, skip the meat and add beans or veggies for a vegetarian option.
This casserole can be assembled and refrigerated unbaked for up to 12 hours.
