For the peanut butter cookie:
  • 1/4 cup sugar
  • 1/4 cup peanut butter
  • 1 egg
For the caramelized bananas:
  • 1 Tablespoon butter
  • 1 large banana
  • 1/2 cup light brown sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • Pinch salt
Other ingredients:
  • 2 scoops vanilla bean ice cream
For the peanut butter cookies:
  1. Prepare a jumbo muffin tin by spraying two of the muffin spaces with nonstick baking spray. Click here for a jumbo muffin tin.
  2. Pre-heat the oven to 350 degrees F (180 C).
  3. Whisk the sugar, peanut butter, and egg together until smooth.
  4. Scoop half of the peanut butter cookie batter into each of the prepared muffin tin spaces.
  5. Bake for about 20 minutes.
  6. Remove the cookies from the oven and place the muffin tin on a cooling rack leaving the cookies inside.
  7. Allow the cookies to cool while you prepare the bananas.
For the caramelized bananas:
  1. Melt the butter in a frying pan over medium heat.
  2. Slice the banana.

  3. Add the sliced bananas, cook and stir for about 2 minutes.
  4. Add the brown sugar, vanilla, cinnamon, and salt.
  5. Lower the heat and continue cooking, stirring constantly for about 2 more minutes.
To assemble the dessert:
  1. Place each cookie disc on a dessert plate or bowl.
  2. Top each cookie disc with a scoop of the vanilla bean ice cream.
  3. Pour half of the banana mixture over top of each of the ice cream scoops.
