Ingredients
5ouncebag of baby spinach leaves
6large eggs
½cupwhole milk(or heavy cream)
½teaspoonsalt
¼teaspoonpepper
1cupshredded cheddar cheese
1pie crust(store-bought 9 inch crust or homemade)
Instructions
Preheat the oven to 375 degrees F.
Roll out the pie crust, if not already shaped, and place it in a pie dish if it isn't already in one.
In a large bowl, whisk together the eggs, milk, salt and pepper. Stir in the spinach leaves and cheddar cheese.
Pour into the prepared pie shell. Bake the quiche for 40-45 minutes, or until the eggs are set in the center. Check on quiche starting at 30 minutes and tent the edges with foil if the crust is browning too quickly.
Let stand for 5 minutes before serving.

Leftover slices of quiche reheat well in the microwave.
