Sweet Potato Casserole

Peel the sweet potato and cut into 1 inch cubes. Place in a medium sauce pan and cover with cold water. Bring to a boil. Reduce heat, and simmer for 15 minutes. Drain and cool slightly.

Place potatoes in the bowl of a stand mixer, or medium bowl. Add the brown sugar, butter, salt, and vanilla and mix until mashed and well combined.

Fold in chopped pecans.

Coat an oven safe baking dish with cooking spray. Scoop the potato mixture into the dish in an even layer.

Sprinkle with chopped pecans.

Top with marshmallows and bake.
