Steak Fajita Nachos

Cut the onion and bell peppers into small strips.

Season the steak with some fajita seasoning on both sides. Cook in pre-heated skillet about 5 – 7 minutes on each side. Transfer the steak to a cutting board and set aside to rest.

Place the bell peppers and onions in the same skillet. Stir-fry for about 5 minutes, or until tender-crisp.

Add water to the skillet. Sprinkle in the fajita seasoning. Stir together until sauce thickens. Turn off heat. Drizzle lime juice over the cooked fajita mixture. Stir to incorporate.

Sprinkle in the cilantro. Slice the steak into thin strips and add back into the pan. Stir to coat.

Place tortilla chips spread out in a layer on a baking sheet or oven safe platter. Top the chips with the steak fajita mixture and the shredded cheese.

Bake until the cheese is melted, about 5 minutes. Garnish with the sour cream and green onion, if desired. Dig in!!!
