EASY ITALIAN PITA POCKETS

On a cutting board, cut the pork into bite-sized cubes.

Dice the green pepper small.

Heat the olive oil in a high-sided frying pan over medium heat. Add the green pepper and pork in a single layer and cook until the meat is cooked through, stirring occasionally.

Stir in the onion, parsley, cornstarch, salt, minced garlic, sugar, Italian seasoning, water, and tomato paste. Bring to a boil, reduce the heat, and simmer for 1 - 3 minutes until thickened.

Fill the delicious pockets of pita bread with lettuce, if desired, meat mixture, and mozzarella cheese. Serve and enjoy.
