Crispy Shrimp Burgers

Pour 1/2 inch of oil into a high sided skillet and pre-heat over medium heat. Chop the shrimp and onion very finely.

In a bowl, add the shrimp, onions, salt and pepper, and stir together. Add flour and water and stir until combined.

Coat your hands in non-stick cooking spray and form the shrimp mixture into two equal burgers.

Prepare three trays sided by side. Place the flour into the first, the beaten egg into the second, and the panko bread crumbs into the third.

Dredge each burger with flour on both sides, then egg on both sides, and finally panko bread crumbs on both sides.

When the oil is fully heated, gently add the two patties and cook for about 2 minutes. Gently flip them over and cook another 2 minutes until golden brown.

Transfer to a paper towel lined plate to drain.

In a small bowl, whisk together the mayonnaise and the pesto.

Place 1 slice of Pepper Jack cheese onto each bun bottom. Add the shrimp patties on top of the cheese, then top with lettuce, and finally top with the pesto mayo mixture. Add the bun tops and serve.
