Ramen Beef and Broccoli

Fill a medium saucepan with water and bring to a boil. Add the ramen noodles and cook 3 minutes. Drain and rinse with cold water and set aside.

In a medium bowl, combine the ground ginger, jarred minced garlic, low sodium soy sauce, warm water, packed light brown sugar, corn starch, sesame oil, and black pepper and stir to combine.

Heat a large skillet over medium heat. Add olive oil, broccoli and water. Cover with a lid and cook 4 minutes, stirring occasionally until crisp tender. Transfer to a separate dish.

Add beef slices and cook about 1 minute per side or just until browned, then reduce the heat to medium low.

Pour the sauce into the skillet and simmer 3 minutes to thicken, stirring occasionally.

Return the broccoli to the pan along with the cooked ramen noodles and toss to combine until coated with the sauce.

Garnish the beef broccoli ramen with sesame seeds and chives and serve.
