Combine the milk with the vinegar in a small bowl and whisk together. This makes homemade buttermilk. Set it aside for 5 minutes to sour.

In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix together.

Next, whisk together the egg and butter into the homemade buttermilk.

Pour the wet ingredients into the flour mixture and whisk together until combined and no lumps remain. The batter will be thick.

Dice the banana and stir into the batter just until combined.

Heat a large electric skillet to 350 degrees F and coat with cooking oil. Pour 4 equal circles of batter onto the skillet and cook until bubbles appear on the surface and the bottom is golden brown.

Flip them over gently with a spatula and cook until the second side is golden brown. Each side should only take a few minutes.

Serve with your favorite pancake toppings and enjoy!
