Teriyaki Pineapple Meatballs

INGREDIENTS
ground turkey (or ground chicken, ground beef)
egg
panko breadcrumbs
pineapple juice (reserved from the can)
Low-sodium soy sauce
jarred minced garlic
dried minced onion
black pepper
can of pineapple chunks or tidbits
green bell pepper
brown sugar
rice vinegar
cornstarch

In a mixing bowl, combine the ground meat, egg, panko, pineapple juice, soy sauce, garlic, onion, and pepper.

Form the ground meatball mixture into eight to ten 1-inch balls and place them on the prepared tray and bake.

In a medium skillet, cook the green bell peppers in a small amount of cooking oil.

At the same time, in a small saucepan, whisk together the soy sauce, water, jarred minced garlic, brown sugar, and rice vinegar and bring to a boil over medium-high heat. Thicken with the cornstarch and water.
