This is a small batch copycat recipe of the crab salad sold in super markets and serves 2 – 4.

This recipe is moderately low-carb, but not necessarily by Keto extreme low-carb guidelines.
Imitation crab is made from surimi, which is minced fish, like pollock, that has been formed into crab-like cuts. It is affordable and versatile. You can substitute it in almost any recipe that calls for shellfish. It contains omega-3s, is a good source of protein, low in carbs, cholesterol, calories, and is low in fat.

I’ve been making this same recipe for as long as imitation crabmeat came on the market. Some days I leave out the onion and add a small can of real crabmeat , imitation crab, and a small amount of Old Bay’s seasoning. Another version is your recipe exactly and add a small amount of fresh cooked shrimp if I have any left over from another shrimp dish. The additions are endless when you start with the basic recipe!
