How to make Hawaiian Pineapple Rice Recipe
Cook the rice according to the package directions.
In a bowl add the soy sauce, garlic salt (or 1 clove of minced fresh garlic), cider vinegar, brown sugar, and pineapple juice. Whisk together until combined and set aside. Click for a whisk.
Dice the onion and bell pepper.
Heat the oil in a wok or large frying pan. Click for a wok or for a non-stick frying pan.
Add the diced onion and bell pepper and cook on medium heat, stirring often for about 5 minutes.
Now add in the diced ham and pineapple chunks and cook for 3 more minutes.
Add in the cooked rice and stir everything together until combined.
Pour in the soy sauce mixture, mix well and stir occasionally while cooking for another 5 minutes.
Move all the rice mixture over to one side of the pan and crack the egg onto the empty side.
Stir the egg with a spatula to scramble it without mixing in the other ingredients.
After the egg is scrambled and cooked through, mix it together with the rice mixture.
Divide the rice mixture between two large dinner bowls and top with chopped fresh chives.

Ingredients
For the Sauce:
- 1/4 cup low sodium soy sauce
- 1 teaspoon minced garlic
- 1 1/2 Tablespoons cider vinegar
- 3 Tablespoons brown sugar
- 2 Tablespoons pineapple juice (reserved from the canned pineapple)
For the Rice:
- 1 Tablespoon cooking oil
- 1/2 onion
- 1/2 bell pepper
- 8 oz. diced ham chunks
- 8 oz. can pineapple chunks in juice (drain and reserve juice for sauce)
- 1 cup white rice
- 1 egg
- Fresh chopped chives for garnish
Instructions

Can I make this with shrimp and how much would I use? Also will I keep the sauce the same or do I need to omit anything from the sauce?

Hi Fina, to use shrimp in this recipe you can use 8 oz (half pound) of shrimp. The sauce can remain the same. I would add the shrimp after step 8. Cook about 2 minutes on each side until pink and opaque. Then continue to step 9. I also have a Shrimp Fried Rice recipe on my site that has a little different sauce.
