This white cheese pizza is easy, quick and has a delicious savory flavor with goat cheese, spinach, mushrooms and gooey melted mozzarella cheese. The dough only takes about 10 minutes to prepare. White cheese pizza generally has no sauce, just a covering of some garlic, olive oil and herbs, often topped with mozzarella cheese and whatever other toppings you prefer. But you can also put a creamy white sauce, like an Alfredo or béchamel sauce, on your pizza if you prefer. Chicken would also be a nice addition on this pizza. This recipe makes a small size pizza about 12 inches.

Heat your oven to 425 degrees F. If you’ve got a pizza stone, be sure to put it in the oven before you turn on the heat. If you don’t have a pizza stone you can get one here.

In a large bowl, dissolve the yeast and sugar in warm (110 degree F) water. The temperature is right when it just barely feels warm to your fingers. Water that is too hot will kill the yeast.

Let the yeast mixture stand for 5 minutes until it becomes frothy.

Add the flour, olive oil and salt and stir with a wooden spoon (or mix by hand, or stand mixer) until a soft dough forms. If the dough is to wet mix in an additional tablespoon of flour at a time until it is no longer sticky. If it’s too dry, mix in additional water a tablespoon at a time.

Roll the dough into a ball and let it rest about 5 minutes while you gather your pizza toppings.

On a clean floured surface roll the dough to your desired thickness and shape, about a 12 inch wide circle.

Dust the pizza pan with cornmeal. Place the dough over the cornmeal.

 

For the topping:

Spread the olive oil over the dough. Top with minced garlic and spread evenly over the crust.

Top the pizza with half of the mozzarella cheese, spinach, and mushrooms.

Sprinkle remaining mozzarella cheese and goat cheese on top.

I used 1/4 cup of shredded mozzarella and 4 ounces of fresh Mozzarella Pearls (looks like mini marshmallows in the picture). I also used already crumbled goat cheese with garlic & herbs in it.

Bake for 12 – 15 minutes.

Ingredients (Choose US or Metric)
For the dough:
  • 1 1/4 teaspoon active dry yeast from a jar
  • 1 Tablespoon granulated sugar
  • 1/2 cup warm water 110ºF
  • 1 1/2 cups all-purpose flour
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • Cornmeal for dusting pans - optional
For the topping:
  • 2 tablespoons extra virgin olive oil
  • 1 clove minced garlic from a jar
  • 1/2 cup shredded or fresh mozzarella
  • 1 cup frozen baby spinach thawed
  • 1/2 cup mushrooms diced
  • 4 ounces goat cheese crumbled
