Easy Pork Over Stuffing for Two - romantic date night dinner

This dish is super easy and uses only 5 ingredients. Boxed stuffing mix eliminates the need to make stuffing from scratch, yet provides homemade flavor. Tender boneless chops instead of bone-in chops cuts down on the cooking time without sacrificing flavor. Pork over stuffing is a simple, quick and tasty perfect dinner recipe for two.

Preheat your oven to 425 degrees F.

 

In a large saucepan, combine the seasoning packet (if it is separate) from stuffing mix with broth and butter. Bring to a boil.

 

Reduce heat to simmer and stir in the stuffing. Cover and remove from the heat. Let stand for 5 minutes.

 

Spoon the stuffing into a greased 8 x 8 baking dish or two individual baking dishes.  Click here for individual oven safe baking dishes.

 

Place a pork chop over each mound of stuffing.

Sprinkle each chop with Worcestershire sauce.

Cover with tinfoil and bake for 15 minutes.

 

Uncover and bake 15 minutes longer or until a thermometer reads 145°.

 

Let meat stand for 5 minutes before serving. Sprinkle with parsley if desired.

  • 1 package stuffing mix 6 ounces each
  • 1 2/3 cups chicken broth
  • 1/4 cup butter cubed
  • 2 boneless pork loin chops 1/2 to 3/4 inch thick
  • Worcestershire sauce
  • Dried parsley optional
