This delicious Chicken Oriental Salad is perfect for a light, refreshing lunch or dinner. It has great crunch in the lettuce, chow mein noodles, and almonds mixed with the soft sweetness of the mandarin oranges. The dressing has incredible sweet and tangy flavor, and it’s quick and easy to make.

Dice two small boneless chicken breasts, season with salt and pepper, and saute them in a medium frying pan until cooked through. Set them aside to cool.

In a small bowl, mix together the mayo, Dijon mustard, oil, honey (or sugar), and vinegar. Whisk until combined. Mine could have used a little more whisking but it still tasted amazing!

Divide the bag of lettuce into two bowls. Then top with the mandarin oranges, almonds, chow mein noodles, and cooked chicken. Drizzle dressing all over the salad, serve and enjoy.

Ingredients
For the Salad
  • 2 small boneless chicken breasts
  • salt and pepper to taste
  • 16 ounce bag Romaine lettuce
  • 8 ounce can mandarin oranges drained
  • 1/4 cup almonds sliced or slivered
  • 1/4 cup chow mein noodles
Oriental Dressing
  • 2 Tbsp honey or sugar
  • 2 Tbsp Cider Vinegar
  • 1/4 c Mayonnaise
  • 2 tsp Dijon mustard
  • 1/4 tsp Sesame oil
Instructions
  1. Dice two small boneless chicken breasts, season with salt and pepper, and saute them in a medium frying pan until cooked through. Set aside and let cool.
