Chicken Fettuccine Michael Pietro’s Copycat

Chicken Fettuccine Michael has perfectly cooked fettuccine smothered in a creamy Parmesan and mushroom sauce and topped with lightly breaded chicken and toasted pine nuts. Ready in 35 minutes!

Chicken Fettuccine Michael is my favorite dish to order at Pietro’s Italian Restaurant in Grand Rapids, Michigan. This is a copycat recipe.

How to make Chicken Fettuccine Michael

Boil the fettuccine according to the package directions. I’m using 2 oz regular fettuccine and 2 oz spinach fettuccine. Pietro’s serves it with this combination as well.

In a dry pan (no oil or butter) over medium heat, cook pine nuts, stirring often, until lightly browned and set aside. Click for a non-stick frying pan.

Coat the diced chicken in the Drake’s Crispy Fry mix and fry in 2 tablespoons of butter in a frying pan until cooked through.  Sprinkle with season salt and set aside. Click for Drake’s Crispy Fry Mix.

In the same frying pan, fry the mushrooms in 2 more tablespoons butter for about 5 minutes.

Too the mushrooms add the heavy cream, Parmesan cheese, and 2 more tablespoons butter, cooking until cheese is just melted and butter is mixed in.

Add in the cooked fettuccine, stirring to coat the pasta.

Top with the chicken, pine nuts and extra Parmesan if desired.

Chicken Fettuccine Michael Recipe

Chicken Fettuccine Michael has fettuccine smothered in a creamy Parmesan and mushroom sauce and topped with lightly breaded chicken and toasted pine nuts.

Ingredients

  • 4 oz fettuccine (or 2 oz regular fettuccine and 2 oz spinach fettuccine)
  • 1/2 lb boneless chicken
  • 1 cup Drakes Crispy Fry Mix
  • Season Salt
  • 6 Tablespoons butter (divided)
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1/2 cup fresh mushrooms
  • 1 Tablespoon pine nuts

Instructions

  1. Cook the fettuccine according to the package directions and drain.

If you want the real-ish deal and for it to look like the photo, after having made this recipe, and having had it many times at Pietro’s, I suggest doubling all the ingredients except the chicken and butter. The real thing is more saucy, has more pasta (I did not use fresh), and more mushrooms. Yes that means, I guess, you will be eating a lot of cream (not to mention the amount of butter already in this recipe) but let’s face it that’s what makes it DELICIOUS.

Hi Zona, You gave me a homemade mix before for this recipe. I think it got erased from the comment section. That is ok. What other brands can I use besides drakes? I am allergic to the ingredients.

I did a search on my site comments to see what I gave you before. You are right but it was on a different recipe that also called for Drakes mix, Asian Chicken Salad, and this is what it said "Hi Fina, I don’t have a homemade fry mix but you could try this instead. It won’t have the same flavor as the Drake’s mix but should give you a nice flavorful crunchy breading on the chicken pieces.

1/2 cup all-purpose flour 1/4 tsp garlic powder 1/4 tsp smoked paprika 1/8 tsp cayenne pepper 2 tsp salt 1/4 tsp freshly ground black pepper"

Hi Zona, What can I use besides drakes crispy fry mix? I cannot use it due to the msg in it. Can you provide me a homemade fry mix?

Hi Fina, I’m not sure if any other product would have the same exact flavor and I do not know the recipe to make it homemade so I recommend only using Drake’s for this exact recipe.
